Our Story

The Salvatore Pizza story began in 1985 when Giancarlo Salvatore, a master pizzaiolo from Naples, brought his family recipes and techniques to California. After years of working in some of Italy's most revered pizzerias, Giancarlo dreamed of introducing authentic Neapolitan pizza to American diners.

With little more than a wood-fired oven and an unwavering commitment to quality, Giancarlo opened the first Salvatore Pizza in San Francisco. The small restaurant quickly gained a reputation for serving the most authentic Italian pizza in the city, with lines often stretching around the block.

What made Salvatore Pizza special was Giancarlo's insistence on using traditional methods—72-hour fermented dough, imported Italian ingredients, and cooking in a genuine wood-fired oven at 900°F for just 90 seconds. These techniques created a pizza that transported diners straight to Naples with every bite.

Today, Salvatore Pizza has grown to multiple locations across California, but we remain family-owned and dedicated to the same artisanal standards established by Giancarlo. His children and grandchildren now help run the business, ensuring that the family traditions and recipes continue for generations to come.

Our Approach to Pizza

At Salvatore Pizza, we believe that great pizza requires three essential elements: time, quality ingredients, and proper technique.

Time

Our dough ferments for 72 hours, developing complex flavors and perfect texture that can't be rushed. This long fermentation also makes our pizza more digestible and enhances the natural flavors of the flour.

Quality Ingredients

We import San Marzano tomatoes, extra virgin olive oil, and flour from Italy. Our mozzarella is made fresh daily, and we source local, seasonal produce from California farms committed to sustainable practices.

Proper Technique

Our pizzaiolos train for months before they're allowed to make pizzas for customers. Each pie is hand-stretched and cooked in our wood-fired ovens at 900°F for just 90 seconds, creating that perfect balance of crispy exterior and soft interior.

This unwavering commitment to doing things the right way—even when it takes more time or costs more—is what sets Salvatore Pizza apart and keeps our customers coming back year after year.

Our Commitment to Sustainability

Sustainable farming practices

As a family business thinking about future generations, we're committed to sustainable practices that minimize our environmental impact:

  • Local Sourcing

We partner with local California farms to reduce food miles and support sustainable agriculture.

  • Eco-Friendly Packaging

All our takeout packaging is made from compostable or recyclable materials.

  • Food Waste Reduction

We carefully manage inventory and donate excess food to local shelters and food banks.

  • Energy Efficiency

Our newest locations utilize solar power and energy-efficient equipment to reduce our carbon footprint.

We're constantly exploring new ways to make our operations more sustainable and reduce our environmental impact while maintaining the quality our customers expect.
